ROYAL ICING (RI) is a smooth pure white icing which dries hard with a matt finish. It is made of simple ingredients like egg whites and icing sugar. However since it is not safe to eat raw eggs, I always use pasteurised egg white. RI is commonly used in cake and cookie decorations, and can also be use as a "glue" for sticking deco. As RI is pure white in colour, it can be easily tinted with food colouring to create colourful arts.

I like to ice my chocolate cookies with sweet RI, to complement the not-so-sweet chocolate cookies. The above Lego themed cookies was specially made for my nephew, Leo (his name when piped on cookie, actually resembled "Lego" when spelled wrongly.. haha) - 7th birthday Lego themed party coming!

Since RI dried hard, we can actually build a sculpture out of it. Photo above showing my favourite Eiffel Tower made for one of my friends which is completely edible! So amazing isn't it! But be careful as it is fragile!

You can get started now with the below recipe to whip out some RI, and have your kids to join in the fun for some cookies deco and bonding session!
Royal Icing Recipe
Ingredients
- 2egg whites
- 1 teaspoon vanilla extract
- 500g icing sugar
- lemon juice or water (optional)
Directions
1. In a large stainless steel bowl, heat up the egg whites with boiling water, placing a candy thermometer in it. Lightly whisk while heating the egg white to 73 degree Celsius.
2.Once it reaches 73 degree Celsius, remove from the heat and start whisking at high speed using a handheld mixer until soft peak.
3. Start adding icing sugar 1 cup at a time, until desired consistency (usually I will use up all the icing sugar as I like to make it stiffer. In the event if I require a flooding consistency, I will add a few teaspoons of water or lemon juice).
4. Add vanilla extract. (You may choose to add other flavouring)
5. Scope into different bowls for mixing different colours. Transfer to zip-lock or piping bag to decorate. Extra icing store in air tight container in refrigerator for up to 1 week.
